Parmesan & Lime Crusted Fish Fillets

Serves: 4
Cooking & Prep Time: 25 minutes

Ingredients

  • 4 X 170g fillets of thick fleshed white fish
  • 3 cups coarse bread crumbs
  • 1 lemon, zested
  • 1 lime, zested
  • ½ cup parmesan cheese, grated
  • ¼ cup parsley, finely chopped
  • ¼ cup chives, finely chopped
  • 1 egg, beaten with ½ cup water
  • oil spray for cooking
  • lemon & lime wedges to serve

Method

  1. Pat fish dry and set aside.
  2. Combine breadcrumbs, lemon & lime zest, parmesan cheese and herbs in a large bowl and mix well.
  3. Dip fish fillets into the egg mixture and coat with the crumb mixture. Press firmly to adhere.
  4. Place coated fillets onto a greased and lined oven tray. Spray with a little cooking spray.
  5. Bake in a pre-heated oven at 200c for 15 minutes or until crumbs are golden.
  6. Serve hot with a crisp garden salad and lemon & lime wedges.

Note : If using thin fillets, garfish, dory or whiting, you may need to serve two per person.
