Parmesan & Lime Crusted Fish Fillets

Ingredients
- 4 X 170g fillets of thick fleshed white fish
- 3 cups coarse bread crumbs
- 1 lemon, zested
- 1 lime, zested
- ½ cup parmesan cheese, grated
- ¼ cup parsley, finely chopped
- ¼ cup chives, finely chopped
- 1 egg, beaten with ½ cup water
- oil spray for cooking
- lemon & lime wedges to serve
Method
- Pat fish dry and set aside.
- Combine breadcrumbs, lemon & lime zest, parmesan cheese and herbs in a large bowl and mix well.
- Dip fish fillets into the egg mixture and coat with the crumb mixture. Press firmly to adhere.
- Place coated fillets onto a greased and lined oven tray. Spray with a little cooking spray.
- Bake in a pre-heated oven at 200c for 15 minutes or until crumbs are golden.
- Serve hot with a crisp garden salad and lemon & lime wedges.
Note : If using thin fillets, garfish, dory or whiting, you may need to serve two per person.
