Oat & Apricot Cookies
Serves: Makes 20
Prep & Cooking Time: 25 minutes
Ingredients
- 1 cup rolled oats
- 1 cup self raising flour
- 1 cup desiccated coconut
- ½ cup brown sugar (firmly packed)
- ½ cup dried apricots, chopped
- 125g melted butter
- 1 egg, beaten
Method
- Combine all the ingredients in a large bowl and mix well until combined.
- Place spoonfuls of the mixture onto a lined baking tray.
- Bake in the pre-heated oven at 190c for 10 -12 minutes or until golden brown.
- Cool on a wire rack.
Note: Store biscuits in a metal tin or airtight container.
