Oat & Apricot Cookies

Serves: Makes 20
Prep & Cooking Time: 25 minutes

Ingredients

  • 1 cup rolled oats
  • 1 cup self raising flour
  • 1 cup desiccated coconut
  • ½ cup brown sugar (firmly packed)
  • ½ cup dried apricots, chopped
  • 125g melted butter
  • 1 egg, beaten

Method

  1. Combine all the ingredients in a large bowl and mix well until combined.
  2. Place spoonfuls of the mixture onto a lined baking tray.
  3. Bake in the pre-heated oven at 190c for 10 -12 minutes or until golden brown.
  4. Cool on a wire rack.

Note: Store biscuits in a metal tin or airtight container.
