Caramelised Onion & Garlic Jam
Serves: Makes 1 jar
Cooking Time: 40 minutes
Ingredients
- 70g butter
- 5 red onions, sliced thinly
- 10 - 12 garlic cloves
- ½ cup brown sugar
- ¾ cup red wine
- ¼ cup balsamic vinegar
- 2 cinnamon sticks
Method
- Melt the butter in a large saucepan over a medium heat and sauté the onions and garlic for 10 minutes or until well browned.
- Stir in the sugar and continue to cook until liquid becomes syrupy.
- Add the red wine, balsamic vinegar and cinnamon sticks to the mixture and stir.
- Simmer uncovered, stirring occasionally for 30 minutes until the jam thickens.
- Serve as an accompaniment to roasted meat, cheese or pate.
Note: Store in an airtight container refrigerated for up to 3 months.
