Caramelised Onion & Garlic Jam

Serves: Makes 1 jar
Cooking Time: 40 minutes

Ingredients

  • 70g butter
  • 5 red onions, sliced thinly
  • 10 - 12 garlic cloves
  • ½ cup brown sugar
  • ¾ cup red wine
  • ¼ cup balsamic vinegar
  • 2 cinnamon sticks

Method

  1. Melt the butter in a large saucepan over a medium heat and sauté the onions and garlic for 10 minutes or until well browned.
  2. Stir in the sugar and continue to cook until liquid becomes syrupy.
  3. Add the red wine, balsamic vinegar and cinnamon sticks to the mixture and stir.
  4. Simmer uncovered, stirring occasionally for 30 minutes until the jam thickens.
  5. Serve as an accompaniment to roasted meat, cheese or pate.

Note: Store in an airtight container refrigerated for up to 3 months.
