Avocado Mango Salsa Salad

Serves: 4
Prep Time: 10 minutes

Ingredients

  • 2 ripe avocados
  • 1 ripe mango, peeled and sliced
  • 3 ripe tomatoes, diced
  • ¼ cup coriander leaves
  • 1 lime, zested and juiced
  • ½ cup sweet chilli sauce
  • 1 tblspolive oil
  • 1 red chilli, finely chopped

Method

  1. Cut avocados in half and remove the stone with a knife twisting clockwise. With a sharp knife, slice the avocado into chunks and remove from the skin with a large spoon.
  2. Place in a bowl with the sliced mango, diced tomato and coriander leaves.
  3. Add the remaining ingredients to the bowl and toss well to combine.
  4. Chill and serve as an accompaniment to any meal, or combine salad with shredded roast chicken or cooked prawns.

Note: This salad will keep refrigerated & covered for 2 days once dressed.
