Avocado Mango Salsa Salad

Ingredients
- 2 ripe avocados
- 1 ripe mango, peeled and sliced
- 3 ripe tomatoes, diced
- ¼ cup coriander leaves
- 1 lime, zested and juiced
- ½ cup sweet chilli sauce
- 1 tblspolive oil
- 1 red chilli, finely chopped
Method
- Cut avocados in half and remove the stone with a knife twisting clockwise. With a sharp knife, slice the avocado into chunks and remove from the skin with a large spoon.
- Place in a bowl with the sliced mango, diced tomato and coriander leaves.
- Add the remaining ingredients to the bowl and toss well to combine.
- Chill and serve as an accompaniment to any meal, or combine salad with shredded roast chicken or cooked prawns.
Note: This salad will keep refrigerated & covered for 2 days once dressed.
